The story
Following tradition, we hang the Malvasia and Trebbiano grapes as soon as they are picked. In a dedicated, airy room the bunches dry for about four months, concentrating their sugars.
After a gentle pressing the must ferments and ages in small casks, the caratelli, for five years. Time does the rest: an amber colour, aromas of dried fruit, honey and figs, a sweetness kept in balance by freshness.
Production is limited and sold on request. Serve it cool with cantucci biscuits, the way every visit to Casa Sola ends.
